Chicken Taco Casserole


4 c Shredded, Cooked Chicken
2 cans Cream of Chicken Soup
1 c Light Sour Cream
10 oz Diced Tomatoes and Green Chilies, undrained
15 oz Black Beans, rinsed and drained
1 oz pkg Reduced-Sodium Taco Seasoning
5 c Coarsely Crushed Tortilla Chips
2 c Shredded Cheddar Cheese
chopped Tomato, sliced Green Onion, and chopped fresh Cilantro for garnish
Preheat oven to 350 degrees and spray a casserole dish with cooking spray. Set aside. Combine shredded chicken, soup, sour cream, green chilies, tomatoes, beans, and taco seasoning in a mixing bowl. In sprayed casserole dish, layer the chicken mix with tortilla chips and cheese. Cover with aluminum foil. Bake casserole for 30 minutes. Remove foil and continue to bake another 10 minutes until cheese begins to bubble. Remove from oven. Sprinkle casserole with garnishes before serving.
